Recorded Sound Levels and Visuals Demonstrate the Impact of Texture in Candied Gum

Crunchy, crunchier, crunchiest

Listen to our podcast about replacing Gum Arabic with TicaPAN® 311 or TicaPAN QuickCrunch

White Marsh, Maryland, August 2, 2011--Seeing is believing and so is hearing. The recorded sounds of three pieces of gum that were each coated (panned) with different texture agents provides evidence that claims of crunchier exteriors provided by alternatives to gum arabic in the confection industry are noteworthy. A comparison of the sound and decibel maps of candy coated gum panned with traditional gum arabic, TicaPAN 311 and TicaPAN Quick Crunch from TIC Gums show how these two alternatives to gum arabic deliver more crunch and other benefits to the candy and confection industry. The sound of crunching that comes from the first bite of gum or candy is very satisfying, but it can also be indicative of freshness, or the lack thereof.

TIC Gums Offers First-Hand Comparisons to
Gum Arabic in Confection Coating Systems

WHITE MARSH, MD--April 18, 2011 – During the recent 65th Annual PMCA Production Conference in Lancaster, PA, TIC Gums demonstrated its TicaPAN® “Crunch Challenge” to those present. Confectioners witnessed first-hand how its TicaPAN product line enables confection producers to make candy or gum with the company’s coating systems. TicaPAN is an alternative to traditional Gum Arabic for making confections.

The comparison showed how TicaPAN Coating Systems perform as drop-in replacements for Gum Arabic, by sampling candy produced using both ingredients. Few could tell the difference. The ability to closely simulate Gum Arabic performance makes TicaPAN Coating Systems an ideal alternative for producing quality, panned candies and chewing gums.
