TicaPAN™ Seal

TicaPAN™ Seal is a film former and functions as an oil and oxygen barrier for panned nuts, chocolate and other oil containing centers. It is used as a sealing syrup at 40% w/w concentration and applied onto to the centers in 3 charges with dusting powder at each charge. TicaPAN Seal may also be used as dusting powder in place of the traditionally used dusting powder in panning to improve oil and oxygen barrier. The TicaPAN Seal syrup is also recommended to be used in gumming the chocolate coat before the sugar syrup panning. TicaPAN Seal promotes faster film build up around the centers and sugar shell build up. TicaPAN Seal is a proprietary blend that was developed at TIC Gums that is patent pending. It is used as a replacement for gum Arabic in this application with improved functionality.
