Ticalose® CMC 2500 C is a medium viscosity, coarse mesh sodium carboxymethylcellulose derived from cellulose. This versatile product is soluble in either cold or hot water and compatible with most water soluble polymers. Ticalose CMC 2500 C is synergistic with dairy and most other proteins. It controls texture and ice crystal growth in frozen dairy products. It also retains moisture in finished products, making it a valuable asset in many bakery applications and low calorie formulations. TIC Gums offers a Pre-Hydrated® grade which is virtually dust-free for easy handling and lump-free for easy dispersion. Pre-Hydrated Gums also hydrate faster than powdered gums.
